Spanakopita: Spinach Feta Triangles Recipe

Ingredients:

  • 1 egg
  • 125 ml (1/2 cup) milk
  • 125 ml (3/5 cup) vegetable oil
  • 2 tablespoons water
  • 1 teaspoon salt
  • 3 rolls of filo dough
  • 100 g (3.5 oz) feta cheese, crumbled
  • 100 g (3.5 oz) cooked spinach, chopped
  • Salt and pepper to taste
  • 1 egg yolk
  • Poppy seeds

Instructions:

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, whisk together the egg, milk, vegetable oil, water, and salt until combined.
  3. Lay out one sheet of filo dough and brush a little of the egg mixture over it. Repeat this process twice more to create three layers of filo dough.
  4. In another bowl, mix together the crumbled feta cheese, chopped cooked spinach, salt, and pepper.
  5. Spread the spinach-feta mixture over the filo dough and roll it into a long strip.
  6. Cut the strip into triangles and place them on a baking sheet lined with parchment paper.
  7. Brush each triangle with egg yolk and sprinkle with poppy seeds.
